Sambal Tumis
Ingredients:
3 onions
6 gloves garlic
6 fresh chillies
15-20 dried chillies (soaked and deseed)
1 tablespoon Belachan (5cm)
1 inch galangal (1 teaspoon galangal powder)
2 lemongrass (white parts only)
3 tablespoon oil for grinding
1/3 cup oil for cooking
Salt to taste
1 tablespoon Tamarind paste
1 tablespoon brown sugar
Methods:
Ground together all the ingredients (except salt, tamarind paste and sugar) with 3 tbsp of oil.
Heat oil in frying pan, Over a medium-low heat, fry the paste, keep stirring once in a while so it doesn't burn and cook till the oil saparated at the edge.
Add Tamarind juice and salt, stir well, add sugar, and stir again. Let it cold down completely before jarred and store. This paste could be stored in the fridge for a month.
参巴虾 Sambal Prawns
Ingredients:
Prawns (shelled)
Sambal tumis
Tomato, cut into small wedges
Onion, cut into slices
Salt to taste
Oil
Methods:
Prepare prawns and season with salt. Cut onion and tomato.
Heat oil in frying pan, add in the Sambal Tumis and fry for a few mins, add in tomato and onion and fry until it starts to soften. Add in prawns and cook until prawns are cooked. Serve hot with rice or Nasi lemak.
叁巴酱
材料:
3个洋葱
6瓣大蒜
6只生红椒
15-20只辣椒干 y
1 tbsp 虾酱(Belachan)
1寸半左右的兰姜
2根香茅(只用白色部分)
3 大匙油 (搅拌用)
1/3杯油(熬煮用)
1 tablespoon 罗望子酱(Tamarind paste)
1 tablespoon 糖
盐
做法:
把所有材料(除了罗望子酱、糖和盐)和3tbsp的油搅拌成糊状。
热油,把辣椒糊倒入锅,中小火煮,要不停的搅拌以免辣椒糊烧焦,熬至辣椒糊边开始泛油为止。
加入罗望子酱和盐,拌匀,加入糖,拌匀。冷却后装罐。这个酱料可以冷藏一个月左右。
叁巴虾
材料:
叁巴酱
鲜虾
洋葱 (切片)
番茄(切块)
罗望子酱(Tamarind paste)
盐
油
做法:
锅里加油烧热,加入叁巴酱,炒几分钟,加洋葱,炒至软,加入虾,番茄,罗望子酱和盐,翻炒至熟。 |
