Mexican chicken fajitas or fajitas de pollo are one of the easiest traditional dishes in Mexican cuisine. The fajitas are usually made with chicken, beef or prawn and serve with warm tortillas, guacamole, salsa, grated cheese, sour cream, lime wedges and shredded lettuce.
Fajitas got their name from the Spanish word “Faja”, which translates to “belt” or “girdle,” referring to the part of the cow where skirt steak comes from. The origin of the fajita is traced back to the Rio Grande Valley in Texas during the 1930s. Fajitas were created by Mexican ranch workers who received skirt steak as part of their wages. They would cook the skirt steak on a fire or grill, then wrap it in a flour tortilla.
Mexican Chicken Fajitas
Ingredients:
800g skinless boneless chicken thigh fillets (cut into thin strips)
1 large red onion (thinly sliced)
1/2-1 red capsicum (julienned)
1/2-1 green capsicum (julienned)
1/2-1 yellow capsicum (julienned)
2 tablespoons olive oil
marinade:
2-3 tablespoon fresh lime juice
2 teaspoons sugar
2 teaspoon cayenne pepper
1-2 teaspoon ground cumin
2 teaspoon paprika
1- 1.5 teaspoon salt
Ground black pepper
Instructions:
Marinate the chicken for 1 hour.
Heat the oil in a large frying pan over medium high heat. Stir fry the marinated chicken for 5-6 minutes. Add the peppers and onions and cook until the chicken strips are cooked through and the vegetables are soft and tender.
Serve hot with warm Flour Tortillas, lime,Salsa and Guacamole.
